I was definitely late to embrace the curry trend. In fact, I distinctly recall not enjoying curry spices for the initial two decades of my existence. Fortunately, individuals evolve and transform with time, and eventually, I developed a fondness for curry (all thanks to recipes like quick curried chickpeas!). Now, I have an insatiable desire to incorporate curry into everything, including this tantalizing Curry Chicken Salad!

There’s just something about the combination of curry and the creamy mayo/yogurt dressing that makes it absolutely perfect! And let’s not forget the delightful hint of sweetness from the raisins, which perfectly balances out the earthy spices. Oh, and let’s not forget about that amazing crunch. It’s simply irresistible. Additionally, when you take into account that pre-made chicken salad at the deli can cost around $10 per pound, this recipe becomes a great deal. Mayo-Yogurt Combo Magic

I opted to incorporate both mayonnaise and yogurt in the dressing for this Curry Chicken Salad as they each contribute distinct flavor attributes to the dish. Yogurt, with its refreshing tanginess, perfectly complements the curry spices, while mayonnaise adds a rich creaminess. Although you have the option to solely use yogurt or mayonnaise if desired, I assure you that the combination of both is simply enchanting. đŸ˜‰

Certainly! If you’re not keen on preparing your own chicken breast or happen to have some leftover rotisserie chicken, feel free to chop it up and incorporate it into this recipe. Approximately 3 cups of chopped chicken should suffice for this particular dish.

How to Make Curry Chicken Salad – Step By Step Photos

In order to prepare the dressing for the Curry Chicken Salad, mix together 1/4 cup of mayonnaise, 1/4 cup of plain yogurt, 1 teaspoon of lemon juice, 1/2 teaspoon of honey, 1 teaspoon of curry powder, 1/4 teaspoon of salt, and a sprinkle of freshly cracked pepper.

Combine the dressing ingredients and mix well. Take a small taste and make any necessary adjustments to the salt, honey, or curry powder according to your preference (as different brands of curry powder can vary). Store the dressing in the refrigerator until you are ready to use it.

For this, you will require approximately 2.5 cups of chopped cooked chicken, equivalent to two chicken breasts, or roughly 1.5 pounds in its raw state.

To prepare the chicken, sprinkle a small amount of salt and pepper over it, and proceed to grill it or cook it in a skillet. Personally, I utilized a grill plate that conveniently fits onto my stovetop, although you may opt for alternatives such as a George Foreman Grill or a cast iron skillet. Alternatively, you can simply purchase a pre-cooked rotisserie chicken from a store for an effortless option.

After allowing the chicken to cool, proceed with preparing the remaining salad ingredients before chopping it into small pieces.

As the chicken cools down, take the opportunity to get the remaining salad ingredients ready. Begin by finely dicing 2 celery ribs and slicing 3 green onions.

Incorporate the chopped chicken, diced celery, sliced green onions, 1/2 cup of sliced almonds, and 1/2 cup of raisins (preferably golden raisins) into a spacious bowl.
