During such moments, my go-to solution is a speedy one-pot skillet lasagna that offers the same comforting and cheesy delight in just about half an hour. How to Make Skillet Lasagna – Step by Step Photos

In a deep skillet, heat 1 Tbsp olive oil over medium heat. Add ½ lb. Italian sausage and cook until browned. Then, incorporate two cloves of minced garlic and sauté for an additional minute.

Combine one 24oz. jar of your preferred pasta sauce, ½ tsp Italian seasoning blend, and 1 cup water into the skillet. Mix well.

Break half a pound (9 noodles) of lasagna into pieces measuring one to two inches in length.

Mix the broken lasagna noodles into the sauce in the skillet, ensuring they are well incorporated. Cover the skillet with a lid and increase the heat to medium-high to bring the sauce to a boil. Once the sauce starts boiling, give it a thorough stir before placing the lid back on. Reduce the heat to medium-low.

To achieve tender noodles, let them simmer in the sauce while stirring occasionally for approximately 15 minutes. If the sauce thickens before the noodles are tender, just add a small amount of water and let them simmer further.

Combine 1 cup of ricotta cheese, ¼ cup of grated Parmesan, ¼ teaspoon of salt, and ¼ teaspoon of pepper in a medium bowl. Stir the mixture until it is evenly combined.

Place dollops of the ricotta mixture evenly on the skillet’s surface, and then scatter 1 cup of shredded mozzarella on top.

For a perfectly melted and golden brown cheese, place the skillet lasagna under the broiler in your oven for a few minutes. Ensure you are using an oven safe skillet and keep a close eye on it. Alternatively, you can cover the skillet with a lid and let it cook over medium-low heat for a few more minutes until the cheese has melted.
