This traditional soup is a delightful blend of ground beef, potatoes, tomatoes, peas, corn, carrots, and green beans, all simmered in a tasty broth. To simplify the recipe, I’ve opted for a frozen vegetable mix, reducing the time and effort required for peeling and chopping. As a result, this Vegetable Beef Soup becomes incredibly quick and effortless to prepare. 🙂

For enhanced flavor in this vegetable beef soup, we’ve incorporated a generous amount of Italian seasoning and Worcestershire sauce into the broth, providing an added layer of depth. To ensure utmost deliciousness, opt for a robust beef broth. Personally, I prefer using Better Than Bouillon to create a rich and flavorful broth for my soups.

I opted to utilize ground beef in my vegetable beef soup due to its affordability and convenience. By selecting a higher fat ground beef, one can choose to either drain the excess fat after browning or leave it in for added flavor and richness.

If you can afford it and prefer to have beef chunks in your soup, opt for a chuck roast or bottom round roast, sliced into 1-inch pieces. Start by browning the beef in the pot before adding the remaining ingredients. It is not necessary to fully cook the meat during the browning process, as it will cook thoroughly while the soup simmers.

How to Make Vegetable Beef Soup – Step by Step Photos

Begin by dicing a yellow onion and mincing two cloves of garlic. Combine the onion and garlic with two tablespoons of olive oil in a soup pot. Sauté the mixture over medium heat until the onions become soft and translucent.

Include 1 pound of ground beef into the mixture and proceed to sauté until the beef is fully cooked. In case you have chosen ground beef with a higher fat content, you have the option to drain off any extra fat, if desired.

As the beef browns, prepare the russet potato by peeling and dicing it into ½-inch pieces, weighing approximately ¾ lb. Afterwards, incorporate the diced potatoes into the pot along with one 28oz. can of diced tomatoes (including the juices), 1.5 tsp of Italian seasoning, ¼ tsp of freshly cracked black pepper, 4 cups of beef broth, and 2 Tbsp of Worcestershire sauce. Stir the ingredients together until well combined.

Increase the heat to medium-high and let the soup reach a boiling point. Once it starts boiling, reduce the heat to medium-low and allow it to simmer for approximately 10 minutes, or until the potatoes become tender when pierced with a fork.

To incorporate, include a 12oz. bag of frozen vegetables containing corn, carrots, and green beans. Stir the mixture thoroughly and let it return to a simmer. Keep the vegetables simmering in the soup for approximately five additional minutes.

In the end, savor the soup and adjust the salt to your preference. The required amount of salt will vary based on the saltiness of the broth employed, but it is probable that you will need at least a small quantity to enhance the flavors.

I added a sprinkle of chopped parsley for visual appeal, although it does not contribute to the taste. However, I do like to add a touch of freshly cracked pepper to each bowl for an additional burst of flavor.
